A gravity-feed slicer cuts whole joints, cured meats and firm vegetables by drawing the product across a spinning circular blade. The blade runs at a constant speed, while the carriage moves the food forward in a straight line. Adjusting the thickness setting shifts the carriage closer to or farther from the blade, so each pass produces slices of uniform thickness without crushing or tearing.
The operator loads the product onto the carriage, secures it with the gripper, sets the desired thickness on the calibrated knob, and starts the motor. The carriage glides forward, the blade slices the food, and the slices fall onto the receiving tray. Once the pass is complete, the carriage returns automatically, ready for the next cut. The process repeats until the product is fully sliced, with no need to stop the blade between passes.
The FIMAR K300 is built around a 300 mm stainless steel blade, with optional diameters of 330 mm, 350 mm and 370 mm available at additional cost. The frame and carriage are constructed from stainless steel, while the thickness adjustment knob and motor housing are made of aluminium. The gripper and carriage lock are designed to hold irregular shapes securely without slipping.
Controls consist of a rotary thickness knob marked from 0 to 15 mm, a start/stop push-button, and a safety interlock that prevents the motor from running unless the carriage is fully closed. The thickness knob sets the gap between the blade and the carriage, determining slice thickness in millimetres.
The 0.37 kW motor draws power from a 3-phase 230–400 V supply, suitable for commercial kitchen circuits. The 35 kg weight provides stability during operation, while the 710 × 550 × 610 mm footprint fits on a standard worktop. The adjustable slicing thickness of 0–15 mm accommodates everything from paper-thin prosciutto to thick-cut roast beef.
Cleaning involves removing the blade guard and carriage, washing them in warm soapy water, and drying thoroughly before reassembly. The blade itself should be sharpened regularly to maintain a clean cut, and the motor housing wiped down with a damp cloth to remove dust and grease.
Variants of the K300 are offered with blade diameters of 330 mm, 350 mm and 370 mm, each at an increased price.
