A meat mincer reduces whole cuts of meat into finely ground product by forcing them through a rotating screw and a perforated plate. The screw draws the meat from the hopper, compresses it, and pushes it against the plate, where a sharp knife slices it into strands. The size of the holes in the plate determines the texture, while the knife's edge ensures consistent cutting without tearing. This method preserves the meat's structure and moisture, producing a uniform grind suitable for sausages, burgers, or fillings without manual chopping.
To operate the FIMAR 22C, load the hopper with chilled meat, ensuring pieces fit the 52 mm inlet. Switch the machine on, and the oiled gear motor drives the screw, pushing the meat through the stainless steel plate with 6 mm holes. The self-sharpening knife rotates against the plate, cutting the meat as it passes. The ground product collects beneath the plate, ready for immediate use or further processing. The entire grinding unit, including the plate and knife, detaches for cleaning or refrigeration, meeting hygiene standards.
The mincer's casing and hopper are made from stainless steel AISI 304, a material chosen for its resistance to corrosion and ease of sanitisation.
