A mozzarella dicing cutter transforms bulk cheese into uniform cubes without crushing or tearing. The machine feeds the block against a rotating disc fitted with blades; each revolution slices the cheese into strips, then a second set of blades crosses the strips to produce cubes. The method keeps the texture intact and the yield high, which is essential when portioning fresh mozzarella for salads, pizzas or buffet platters.
To operate the FIMAR TAC, the operator places the cheese block into the feed hopper, closes the safety cover and starts the motor. The rotating disc draws the cheese through the blades at a steady 140 rpm, producing a continuous stream of cubes. A security switch on the handle and another on the cover prevent the motor from running unless both are engaged, protecting hands and fingers during use.
The construction combines a stainless-steel body with an aluminium base block and cover, materials chosen for hygiene and lightness. The cutting discs and knives are sold separately, allowing the operator to select cube size for each service.
The 0.4–0.45 kW motor draws power from either a 230 V single-phase or 400 V three-phase supply, fitting the circuits commonly found in professional kitchens. The 17 kg weight keeps the unit stable on a worktop while remaining light enough to move when the kitchen is reorganised. The footprint of 330 mm by 380 mm leaves room for a standard gastronorm tray alongside, ready to receive the diced cheese.
Cleaning follows the materials: the stainless-steel body and aluminium parts can be wiped with a sanitising solution, while the removable hopper and cover allow thorough rinsing under a tap. The absence of internal crevices reduces trapped residue, speeding the daily turnaround between services.
