A nuzzle controls the flow of dough from a canestrini dispenser into the boiling oil. The 16 mm brass-bronze alloy nozzle forms a smooth, rigid outlet that resists heat and wear while shaping the dough into even strands. Its circular cross-section gives a consistent diameter to every piece, so the finished product cooks uniformly without manual cutting or portioning. To use the nuzzle, the operator fits it into the dispenser's hopper outlet and secures it with the retaining collar. Dough is loaded into the hopper, and the dispenser's lever or motorised mechanism pushes it through the nuzzle. The strands drop directly into the fryer basket or onto the worktop for later frying.
