Accessory for pasta maker. Nuzzle - capelli d'angelo ⌀ 1mm
A nuzzle shapes pasta dough into Capelli d'Angelo, the fine, angel-hair strands that cook in seconds and hold light sauces without clumping. The dough is forced under pressure through the circular opening; the smaller the diameter, the finer the strand. A 1 mm opening produces the delicate threads that professional kitchens use for garnishes, soups and seafood dishes.
To use, the operator fits the nuzzle into the extrusion head of the pasta machine, locks it in place, then feeds the dough into the hopper. The machine's auger drives the dough forward, pressing it through the nuzzle. The emerging strands are cut to length by the machine's blade or by hand, then transferred directly to boiling water or to a tray for later cooking.
The nuzzle is made of a brass and bronze alloy, chosen for its resistance to corrosion and its smooth surface that does not snag the dough. The alloy also withstands the repeated cleaning cycles that follow each service.
This 1 mm diameter nuzzle is supplied for the FIMAR PF15E pasta machine. It can also be fitted to the PF25E, PF40E and PF80E models with the appropriate adaptor, which is ordered separately.
The 1 mm diameter determines the thickness of the pasta strand, giving the fine texture that defines Capelli d'Angelo. The compact size of the nuzzle allows it to be stored in a small drawer or cupboard when not in use.
After each use, the nuzzle is removed from the machine, rinsed under warm water to clear any dough residue, then dried and stored. The brass and bronze alloy does not require seasoning or protective coatings, so it can be returned to service immediately once clean.
