A nuzzle shapes pasta dough into linguine strands as it is forced through the die under pressure. The dough is pushed by an auger inside the pasta extruder; the nuzzle's precisely sized holes determine the thickness and profile of each strand. The pressure and speed of extrusion work together to produce uniform, firm linguine without tearing or sticking.
To use the nuzzle, the operator fits it into the extruder's die holder, securing it with the locking ring. Dough is loaded into the hopper and the machine is started. As the auger turns, dough is pressed through the nuzzle's 4 mm openings, emerging as continuous linguine strands that drop onto a tray or conveyor below. The operator monitors the flow and cuts the strands to the desired length once extrusion is complete.
The nuzzle is constructed from a brass and bronze alloy, chosen for its resistance to corrosion and wear when in contact with moist dough. The alloy also provides a smooth surface that minimises friction, helping the dough to slide through the die without clogging.
This 4 mm nuzzle is supplied as a set of four individual nozzles, each producing a single strand of linguine. The set is compatible with the FIMAR PF15E pasta extruder as standard. Adaptors are available for use with the PF25E, PF40E and PF80E models, allowing the same nuzzle to be fitted across a range of machine sizes.
In a professional kitchen, the 4 mm diameter produces linguine that holds sauces well while remaining firm after cooking. The brass and bronze construction requires regular cleaning to prevent dough residue from hardening; after each use the nuzzle is removed, rinsed in warm water and brushed to clear any remaining dough from the holes. Periodic inspection ensures the holes remain free of burrs or wear that could affect strand uniformity.
