A nuzzle shapes pasta dough into maccheroni as it is forced through the die under pressure. The dough enters the nuzzle as a soft mass and emerges as a continuous strand with the characteristic hollow tube. The internal diameter of the nuzzle determines the size of the maccheroni; this one produces a 4.8 mm tube that cooks evenly and holds sauce well.
The operator fits the nuzzle into the extruder head, secures it, then loads the dough hopper. Once the machine starts, the auger pushes the dough through the nuzzle at a steady rate. The operator watches the strand form, cuts it to length with the cutter bar, and collects the maccheroni for drying or immediate cooking.
This nuzzle is made of a brass and bronze alloy chosen for its resistance to corrosion and wear from acidic dough and frequent cleaning. The alloy also conducts heat evenly, preventing hot spots that could scorch the pasta.
The 4.8 mm diameter is a standardised size that matches commercial maccheroni specifications. It fits the FIMAR PF15E pasta extruder as standard. For the PF25E and PF40E models an adaptor is required, and for the PF80E a different adaptor is needed.
Cleaning follows each use: the nuzzle is removed, rinsed under warm water to clear dough residue, then scrubbed with a nylon brush. The alloy surface does not absorb flavours or harbour bacteria, so a thorough rinse restores it to a ready state.
