Accessory for pasta maker. Nuzzle - maccheroni ⌀ 8,5mm
A nuzzle shapes pasta dough into maccheroni as it is forced through the extruder. The dough is pushed under pressure through the circular opening, emerging as a continuous tube of consistent diameter. The smooth interior of the nuzzle ensures the dough flows evenly without tearing, while the alloy resists wear from the abrasive mixture of flour and water. This method produces uniform maccheroni that cook evenly and hold sauce well, a requirement for professional pasta production.
To use the nuzzle, the operator attaches it to the extruder's die plate, securing it in place. Dough is loaded into the hopper and the machine started; the auger drives the dough forward, pressing it through the nuzzle. The emerging maccheroni is cut to length by the machine's blade or manually, depending on the model. The nuzzle remains in place until the batch is complete or a different shape is required.
The nuzzle is made of a brass and bronze alloy, chosen for its durability and resistance to corrosion in a wet environment. The 8.5 mm diameter opening determines the size of the maccheroni, suitable for dishes where a slightly thicker pasta is preferred.
This nuzzle fits the FIMAR PF15E pasta extruder as standard. With an adaptor, it can also be used on the PF25E, PF40E, and PF80E models, allowing the same shape to be produced across different machine sizes. The diameter remains constant regardless of the extruder's output capacity, ensuring consistency in the finished product.
Cleaning follows the same routine as the extruder itself: the nuzzle is removed and rinsed under warm water to clear any dough residue. A brush may be used to clear the opening, but abrasive tools are avoided to prevent damage to the alloy. The nuzzle is dried thoroughly before storage to prevent oxidation.
The catalogue places this item under pasta equipment, specifically as a spare or replacement part for FIMAR extruders.
