Accessory for pasta maker. Nuzzle - spaghetti alla chitarra 2x2mm
A nuzzle shapes pasta dough into the square strands of spaghetti alla chitarra. The dough is pressed through a grid of fine apertures; the size and profile of each hole determine the thickness and cross-section of the strand. A 2x2 mm aperture produces the classic square spaghetti that holds sauce in its corners.
The operator loads the dough into the hopper of the pasta extruder, selects the programme and starts the motor. The dough is forced through the nuzzle under pressure; the strands emerge onto a tray or directly into boiling water. The nuzzle remains in place until the batch is finished or the shape is changed.
This nuzzle is made of a brass and bronze alloy. The alloy resists corrosion from acidic dough and is easily cleaned between batches.
The 2x2 mm aperture is fixed; no adjustment is provided. The nuzzle fits the PF15E pasta extruder as standard. Optional nozzles are available for the PF25E, PF40E and PF80E models.
The 2x2 mm size opens a specific pasta shape: strands that are square in cross-section, thick enough to remain firm after cooking, yet fine enough to cook evenly. The brass and bronze construction gives a smooth surface that releases the dough cleanly.
Cleaning follows the parts the entry names. The nuzzle is removed from the extruder, rinsed under warm water to remove dough residue, then brushed with a soft brush to clear the apertures. It is dried and stored until the next use.
