A vertical slicer uses a rotating circular blade to cut food held against a vertical carriage. The blade turns continuously while the carriage moves the food horizontally across the blade edge, producing slices of uniform thickness. This method gives clean cuts without crushing, making it suitable for delicate items like smoked salmon, cured meats and soft cheeses that would deform under a horizontal blade or a press.
The operator loads the food onto the carriage, secures it with the clamp, then sets the slicing thickness on the calibrated dial. After switching on the motor, the carriage moves automatically across the blade; the operator guides the food but does not push it. Once the cut is complete, the carriage returns to the start position and the next piece can be loaded. The process repeats until the required quantity is sliced.
The V250 is built with a 250 mm stainless-steel blade mounted on a painted steel frame. The carriage and clamp are aluminium for light handling, while the base is cast iron to keep the unit stable on the worktop during operation.
Controls consist of an on-off switch, a motor start button and a thickness adjustment dial marked from 0 to 15 mm. The dial sets the distance the carriage travels between cuts, determining slice thickness.
The 230 V single-phase voltage requirement matches the standard supply in British commercial kitchens, allowing the slicer to be plugged into a dedicated circuit without special wiring.
