Charcoal oven with grill equipped with a 760x520 mm grill.
- : FM industrial
- Article number: ST G500
A charcoal oven harnesses radiant heat from burning charcoal to cook food evenly and impart a distinct smoky flavour. Unlike gas or electric ovens that rely on convected or conducted heat, the charcoal's embers emit infrared radiation, searing the exterior of meats, fish, and vegetables while keeping the interior moist. The enclosed chamber traps heat and smoke, concentrating the flavour and allowing the temperature to be controlled by adjusting the airflow and charcoal load. This method is particularly effective for slow-roasting, grilling, and baking, as the steady, high heat crisps skins and caramelises surfaces without drying the food out.
To operate the FM Industrial ST G500, the operator loads the foundry fire plan with charcoal and ignites it. After approximately 45 minutes, the oven reaches the working temperature range of 250–350 °C, monitored by the integrated thermometer. The temperature is regulated using the control system, which adjusts the airflow to maintain the desired heat. Food is placed on the stainless steel grill, and the anti-impact door is closed to retain heat and smoke. During cooking, grease drips into the collection box, while ash falls into the removable ash box for easy disposal. Once cooking is complete, the door is opened, and the food is removed from the grill.
The ST G500 is constructed entirely of stainless steel, including the interior, grill, and exterior panels. The foundry fire plan ensures even heat distribution, while the thick insulation minimises heat loss, improving efficiency. The door features an anti-impact system to withstand frequent use, and the integrated thermometer provides precise temperature readings. A 120 mm fumes outlet connection allows for safe ventilation of smoke and gases, essential for maintaining air quality in a professional kitchen.
The 5.5 kW power rating indicates the electrical load required for any auxiliary components, such as fans or ignition systems, while the 285 kg weight reflects the oven's sturdy construction and the need for a stable, permanent installation. The 930 x 720 x 680 mm footprint requires a dedicated space on the worktop or floor, with clearance for ventilation and door operation. The dual GN1/1 capacity allows for simultaneous cooking of two full-size gastronorm trays, making it suitable for batch cooking in busy kitchens.
Cleaning involves emptying the ash box and grease collection box after each use to prevent build-up and maintain hygiene. The stainless steel interior and grill can be wiped down with a damp cloth and mild detergent, while the exterior panels should be cleaned regularly to remove soot and grease. The oven's construction ensures durability, but the door seals and ventilation connection should be checked periodically to ensure proper function.
The ST G500 is designed for professional kitchens requiring high-temperature charcoal cooking, offering precise control and robust construction for consistent results.
