A convection oven circulates hot air with a fan, spreading heat evenly across every shelf. The fan draws air from the chamber, passes it over heating elements and pushes it back through vents. This constant movement eliminates cold spots, so food cooks faster and more uniformly than in a static oven. Moisture control adds steam when needed, keeping roasts succulent and pastries crisp.
The STG 72 M is loaded through a front door. Trays slide onto wire racks that run the full depth of the chamber. The oven accepts seven full-size gastronorm 2/1 trays lengthwise or fourteen half-size 1/1 trays crosswise. Set the temperature with a rotary knob, choose continuous run or a countdown timer, and adjust humidity from dry to fully steamed. A manual steam release valve lets the operator vent excess moisture at any point. Dual-direction fan blades reverse periodically to prevent hot zones near the vents.
