A pizza oven that heats a refractory deck to radiant temperatures, transferring heat evenly through the base while the dome reflects it back onto the toppings. The refractory material stores and releases energy steadily, so the crust crisps without scorching and the cheese melts without drying out. No fan is needed; the heat circulates naturally between the deck and the dome, creating the high, dry environment that gives Neapolitan-style pizzas their characteristic leopard-spotted crust and soft centre.
The operator slides two 350 mm pizzas onto the deck, sets the temperature up to 320 °C, and chooses either a timed cycle of up to 60 minutes or continuous operation. A timer counts down the selected interval and sounds an alarm when the cycle ends, while a separate indicator confirms the oven is still holding temperature in continuous mode. The door remains closed during cooking to maintain the radiant field; opening it briefly to check or turn a pizza does not cause a significant drop in deck temperature.
The cooking surface is made of high-quality refractory material that withstands repeated thermal shock and resists warping. The exterior is stainless steel, finished in a brushed satin that reduces visible fingerprints and scuffs. The control panel is mounted on the front, with a rotary knob for temperature, a push-button timer, and a switch to toggle between timed and continuous modes.
