A butcher chopping block provides a stable, hygienic surface for cutting and portioning meat in professional kitchens. The block absorbs the impact of cleavers and knives, protecting both the blade and the worktop beneath. Its solid construction prevents movement during use, allowing precise cuts without shifting or slipping.
The polyethylene surface resists deep scoring from repeated chopping, so the block remains smooth and easy to clean. Unlike wooden blocks, polyethylene does not absorb moisture or harbour bacteria, making it suitable for high-turnover environments where hygiene is critical. The material also withstands frequent washing and sanitising without warping or cracking.
The block stands on an AISI 304 stainless steel stool, which raises the cutting surface to a comfortable working height. Stainless steel is corrosion-resistant and easy to wipe down, ensuring the stand remains clean and stable under heavy use. The stool's legs provide a sturdy base, preventing tipping or wobbling during vigorous chopping.
To use the block, place it on a level floor in the preparation area. The operator stands at the block, positioning meat on the polyethylene surface before cutting. After use, the block and stool can be wiped with a sanitising solution to remove residue. The polyethylene surface can be scrubbed with a brush if needed, while the stainless steel stool requires only a damp cloth to maintain its finish.
The block measures 1000 mm in length, 500 mm in width and 880 mm in height, providing ample space for large cuts of meat while fitting within standard worktop layouts. Its footprint allows it to be placed alongside other preparation equipment without overcrowding the kitchen.
