A dry-ageing cabinet creates the exact climate that turns primal cuts into richly flavoured, tender meat. Air circulates at a steady speed, moisture is held at a set level and the temperature stays within a narrow band. This slow, controlled environment breaks down connective tissue without spoilage, concentrating the natural juices and developing a distinctive nutty depth. The process relies on consistent conditions that a domestic refrigerator cannot provide; the ager's sealed chamber and calibrated controls deliver them hour after hour.
The FORCAR G-GDMA180N is loaded through a full-height glass door. Three stainless-steel grid shelves and a rod with three hooks hold the meat clear of the walls so air flows evenly around every piece. The operator sets the desired temperature between +1 °C and +25 °C, and the unit maintains it automatically. A built-in UV sterilising lamp runs continuously, reducing airborne bacteria and mould spores that could taint the product. Humidity and ventilation are regulated by the same control system, ensuring the surface of the meat dries at the correct rate while the interior ages.
A door-opening sensor triggers an acoustic warning light if the door is left ajar, preventing temperature drift. Faults are signalled the same way, so the kitchen team can intervene quickly. The exterior is black-painted sheet metal; the interior liner is anti-bacterial ABS, chosen for its resistance to moisture and ease of cleaning. All support rods and hooks are made from AISI 304 stainless steel, which withstands the humid atmosphere without corroding.
The 352 L internal volume gives enough room for several large cuts at once, while the external footprint of 595 mm by 710 mm fits into most worktop layouts. The 96 kg weight means the unit is moved on a trolley before it is positioned; once in place it remains stable. A standard 220-240 V, 50 Hz single-phase supply powers the 170 W compressor and fans, drawing no more current than a domestic refrigerator.
Cleaning is carried out after each ageing cycle. Shelves and hooks are removed and washed in hot water with detergent, then dried before being replaced. The ABS interior is wiped with a damp cloth and a mild sanitiser; abrasive cleaners are avoided to prevent scratching the surface. The UV lamp is checked periodically and replaced when its output falls below the safe level.
