Stainless steel surface
A heating stove that maintains food at serving temperature with radiant warmth from an infrared lamp. The lamp emits focused heat without drying the surface, keeping plated dishes warm while preserving texture and moisture. A polycarbonate cover traps the heat, creating a gentle warming zone above the stainless steel worktop.
The operator places the dish on the warming surface, closes the cover and sets the thermostat between +30 °C and +90 °C. The lamp cycles on and off to hold the chosen temperature, allowing staff to keep multiple plates ready without reheating. The two 0.25 kW elements share the load, drawing power from a standard 220–240 V single-phase circuit common in professional kitchens.
Construction is AISI 304 stainless steel for the frame and warming surface, chosen for corrosion resistance and ease of cleaning. The grey polycarbonate cover is lightweight yet durable, shielding the lamp and reflecting heat downward. Overall dimensions of 450 mm depth, 640 mm width and 800 mm height allow the stove to sit on a worktop or counter without overhang.
Controls consist of a single adjustable thermostat calibrated from +30 °C to +90 °C. This range covers holding temperatures for sauces, plated mains and desserts, but does not reach cooking levels. The voltage requirement of 220–240 V matches the supply in most commercial kitchens, avoiding the need for a dedicated transformer.
Cleaning follows from the materials: the stainless steel surface wipes clean with a damp cloth, while the polycarbonate cover can be removed for washing in warm soapy water. The infrared lamp itself requires only occasional dusting with a dry cloth to maintain output.
