Stainless steel surface
This heating stove keeps food at serving temperature using infrared radiation, which transfers heat directly to plates and trays. Three infrared lamps emit short-wave energy to warm contents from above, while the stainless steel worktop reflects residual heat upward for even, gentle holding. This approach prevents hot spots and moisture loss, ensuring dishes remain ready for service without further cooking or condensation build-up.
Filled gastronorm trays or plated dishes are placed on the warming surface, and the polycarbonate cover is lowered to retain heat. The adjustable thermostat is set between +30 °C and +90 °C, with the lamps cycling on and off to maintain the chosen temperature. Staff can monitor food through the transparent cover without opening it. Once service ends, the lamps are switched off, and the unit is left to cool before cleaning.
The frame and warming surface are made from AISI 304 stainless steel, selected for its corrosion resistance and ease of sanitisation in commercial kitchens. A grey polycarbonate cover encloses the lamps, protecting them from accidental contact and reducing heat loss. The unit measures 1270 mm wide, 680 mm deep, and 800 mm high, offering ample workspace while fitting beneath standard kitchen shelving.
A single adjustable thermostat, calibrated from +30 °C to +90 °C, allows precise temperature control for different food types. The stove operates on a 220–240 V single-phase supply, compatible with standard electrical circuits in most professional kitchens.
The power rating is 0.6 kW for the first lamp and 0.75 kW for the other two. The temperature range of +30 °C to +90 °C suits holding hot entrées, soups, sauces, and plated desserts but excludes cooking or reheating processes requiring higher heat.
Cleaning involves wiping the stainless steel surface with a damp cloth and approved sanitiser after each service. The polycarbonate cover should be removed periodically to clean the interior and lamp housings. The infrared lamps require no maintenance beyond occasional checks for damage or dust accumulation.
