An infrared hot plate keeps prepared dishes at serving temperature without further cooking. Two quartz lamps emit short-wave infrared energy that penetrates the surface of the food, warming it evenly while preserving moisture and texture. The lamps sit above a stainless steel work surface, directing heat downward onto plates or trays placed beneath. The operator places the dish on the stainless steel plate, switches the unit on, and sets the thermostat to the desired holding temperature between +30 °C and +90 °C. The lamps cycle on and off automatically to maintain the chosen level, so no constant monitoring is needed. Once the meal is served, the unit can be switched off and the surface wiped clean. The PCI4718D features a stainless steel frame that resists corrosion and stands 680 mm tall, fitting under standard worktop extractors. Its footprint of 580 mm by 330 mm allows it to sit on a counter or shelf without crowding adjacent equipment. Power is split across three circuits—two for the lamps and one for controls—so it can be plugged into a single-phase 220-240 V supply found in most professional kitchens. The adjustable thermostat lets the chef choose a temperature that matches the dish—lower for delicate sauces, higher for roasted vegetables or grilled meats. Cleaning is straightforward: the stainless steel surface and frame can be wiped with a damp cloth and mild detergent after each service. The infrared lamps themselves require no maintenance beyond occasional dusting with a dry cloth to keep output at full strength. The stainless steel chassis and sealed infrared lamps slide out from the frame without tools so the workspace stays clean between shifts.
