Perfect for mixing and forming pasta into various shapes
A pasta maker that kneads, extrudes and cuts in one continuous cycle, the FORCAR PF80E turns semolina and water into fresh pasta at a rate suited to professional service. The machine drives dough through a water-cooled extrusion nozzle, shaping strands without overheating the mixture. A stand holds the unit at a comfortable worktop height, while an included cutter trims the strands to length as they emerge.
Inside the stainless-steel bowl, a helical auger presses the dough forward under controlled pressure. The extrusion nozzle cools the dough as it passes, preventing sticking and preserving the texture of egg-based or whole-wheat recipes. A digital control panel sets the auger speed, allowing the operator to match the output to the type of pasta and the kitchen's demand. A safety microswitch on the bowl-cover lid stops the motor if the lid is opened during operation, while slits in the lid let ingredients be added without interrupting the cycle.
To operate, the bowl is filled with the dry ingredients, the lid closed and the water added through the slits. The digital panel is set to the desired speed, and the machine started. As the dough forms, it is forced through the cooled nozzle, emerging as continuous strands that the cutter trims to the required length. The strands are collected on a tray or directly into boiling water for immediate cooking.
The entire bowl lifts off the base for cleaning; the extrusion nozzle and cutter are also removable. Stainless steel surfaces are wiped down after each use, and the water-cooling circuit is drained and flushed weekly to prevent scale build-up. The 76 kg weight keeps the unit stable on the stand during operation, while the 396 mm depth and 537 mm width fit within a standard worktop run.
The PF80E runs on a 380-415 V three-phase supply, drawing 1.5 kW to maintain the 20 kg/h output. The voltage requirement matches the supply used in most professional kitchens, avoiding the need for a separate transformer. The machine is supplied with a stand and a pasta cutter, ready for immediate installation on a solid, level floor.
