A pastry refrigerator keeps delicate items such as cakes, pastries and fresh dough at a steady low temperature without drying them out. Instead of blowing cold air directly onto the food, it circulates the air gently around the cabinet. This indirect ventilation prevents dehydration and surface damage, preserving texture and extending shelf life. The cabinet is heavily insulated so that the temperature stays even when the door is opened frequently during service. The GEMM ARP/41 is built for 60×80 cm gastronorm trays. Twenty pairs of runners are supplied, allowing the interior to be organised with up to forty trays. The runners have a 16.5 mm pitch, so each tray can be positioned at any of 74 vertical levels. This flexibility lets the operator store items of different heights side by side without wasted space. To load the refrigerator, the operator slides trays onto the runners, closes the door and sets the desired temperature on the 2.8-inch touch control panel. The digital display shows the current cabinet temperature and the chosen set-point. Once the temperature is reached, the unit maintains it automatically. An internal sensor monitors humidity and keeps it high, further protecting fresh products from drying out. When the door is opened, the fan pauses to prevent cold air spilling out, then restarts once the door is closed again. The cabinet is constructed from stainless steel inside and out. The insulation is 75 mm thick, reducing heat transfer and cutting energy use. A hot-gas automatic defrost system melts any ice build-up without manual intervention, and condensate water is drained away automatically, so the interior stays dry and hygienic. The control panel offers precise adjustment of temperature between -2 °C and +8 °C. This range covers chilled storage for pastries, fresh dough, fruits and vegetables, and also allows the refrigerator to be used for defrosting frozen items overnight. The R290 refrigerant circulates silently through the evaporator coils, chilling the stainless-steel interior without drying the air so delicate pastries stay moist and crusts remain crisp. The unit runs on a single-phase 230 V supply, the standard circuit found in most professional kitchens. Its 1.005 kW power rating indicates the load it places on the circuit. The 608 L net capacity provides ample storage for a busy pastry section, while the 790 mm width and 1080 mm depth fit within the footprint of a standard worktop.
