A refrigerated worktable keeps ingredients chilled at the exact point they are prepared, eliminating trips to a separate cold room. The GEMM GN1/1 TAP/21 A circulates cold air through a static evaporator aided by a low-speed fan, creating an even temperature field without drying the product. This method balances gentle cooling with consistent airflow, so every shelf holds the same temperature regardless of how often the door is opened.
The operator loads standard 60 x 40 cm gastronorm containers onto seven pairs of adjustable runners spaced at 75 mm intervals. After setting the desired temperature between 0 and +8 °C on the 2.8-inch touch panel, the unit maintains the climate automatically. An internal heating element melts any frost that forms on the evaporator, and the resulting water drains away without manual intervention. The right-hand technical compartment gives access to the refrigeration system for routine checks without moving the table.
The entire structure is built from stainless steel, including the 40 mm high worktop that doubles as a food-safe preparation surface. A 50 mm layer of thermal insulation surrounds the 404 litre interior, reducing energy use while keeping the exterior cool to the touch. The refrigerant R290 is a hydrocarbon with low global-warming potential, chosen for its efficient heat transfer and compliance with current environmental regulations.
The table measures 2100 mm long, 800 mm deep and 1000 mm high, with a body height of 710 mm that matches standard worktop levels. At 225 kg it is heavy enough to remain stable during use, yet the smooth stainless-steel exterior allows it to slide into position on most kitchen floors. It draws 0.410 kW from a single 230 V circuit, suitable for a dedicated kitchen spur.
Cleaning involves wiping the interior and runners with a damp cloth after removing the containers, while the exterior and worktop can be sanitised with standard kitchen detergents. The touch panel is sealed against moisture, allowing it to be cleaned with a damp microfibre cloth. Seven pairs of runners are included; no additional accessories are required for immediate use.
The TAP/21 A model is classified as Climate Class 5, meaning it operates reliably in ambient temperatures up to +40 °C and high humidity, making it suitable for busy kitchens where the room itself may become warm during service.
