A pastry retarder-proofing cabinet slows fermentation or accelerates it under controlled conditions, giving bakers precise timing over dough development. Cold air from a refrigeration system circulates around the dough, slowing yeast activity to extend proofing or to hold dough overnight without over-proofing. When warmer air is needed, the same system raises the temperature, speeding up fermentation for consistent rise and texture. Humidity control prevents the dough surface from drying or forming a skin, ensuring even expansion and a uniform crust after baking.
The operator loads trays of dough onto adjustable runners, sets the desired temperature and humidity on the touchscreen, and starts the programme. A delay function holds the start time, so the dough reaches the oven at the exact moment the baker needs it. Adjustable fan speed ensures even air distribution, while an automatic defrost cycle with condensate drainage keeps the interior clean and frost-free without manual intervention.
The cabinet is built from stainless steel for hygiene and durability, with 50 mm thermal insulation to maintain stable temperatures and reduce energy use. Two doors provide access to the full interior, which accepts standard 60 x 40 cm trays on seven pairs of runners spaced 75 mm apart. The technical compartment is housed on the right side for easy servicing.
Controls are grouped on a 5-inch touchscreen that offers a multilingual interface. The operator sets temperature between -2 °C and +35 °C, adjusts humidity via an electronic sensor, and programmes the backing delay. Fan speed can be fine-tuned at every stage to match the dough's requirements.
A 270 L capacity allows the cabinet to hold multiple trays of dough, while the 1550 x 800 x 1000 mm footprint fits into most professional pastry sections. The 0.37 kW power rating draws a modest load on a single-phase 230 V supply, suitable for standard kitchen circuits. The refrigerant R290 is a hydrocarbon with low environmental impact, and the unit meets climatic class 5, ensuring reliable operation in ambient temperatures up to +40 °C.
Cleaning involves wiping the stainless-steel interior and exterior with a damp cloth, removing trays and runners for separate washing, and checking the condensate drain for blockages. The automatic defrost system reduces manual upkeep, but the technical compartment should be kept clear for airflow and servicing access.
