Humidity control 60–90% RH
A pastry retarder-proofer cabinet slows yeast activity at low temperatures and then reactivates it under controlled warmth and humidity. The refrigeration system removes heat from the chamber, while an internal fan circulates cooled air evenly across every tray. Humidity is added as fine mist to prevent dough from drying out during the long proofing cycle. This dual control over temperature and moisture lets bakers programme overnight retarding and timed proofing without manual intervention, so batches emerge at the correct volume and texture ready for the oven.
The operator loads standard 60 x 40 cm trays onto the adjustable runners, sets the desired temperature between -2 °C and +35 °C, and programmes the humidity level via the touchscreen. A backing delay timer postpones the start of the proofing phase, allowing dough to rest overnight or until the next shift. Fan speed can be adjusted at each stage to match the product: gentle circulation for delicate pastries, stronger flow for rapid cooling. The automatic defrost cycle activates heating elements to melt ice, and condensate drains away without manual emptying.
The cabinet is constructed from stainless steel inside and out, with 50 mm thermal insulation that reduces heat transfer and keeps the exterior cool to the touch. Three doors give access to the full 404 L chamber, while the technical compartment on the right side houses the refrigeration unit and controls for easy servicing. Runners are spaced 75 mm apart, allowing trays to be stacked at the required height without touching.
