A great accessory for mixing sushi rice with vinegar.
A rice mixing bowl designed for preparing sushi rice, this Hangiri by HENDI holds the grains while they absorb seasoning evenly. The wide, shallow shape increases the surface area of the rice, allowing the vinegar mixture to coat each grain without clumping.
The operator fills the bowl with freshly cooked rice, then pours the vinegar, sugar and salt mixture over the top. Using a rice paddle, the grains are gently folded from the edges towards the centre, distributing the seasoning without crushing the rice. The smooth polymer surface prevents sticking, so the rice releases cleanly after mixing. Once the rice is seasoned, the bowl can be left on the worktop while the rice cools to serving temperature.
Constructed from a lightweight polymer, the bowl resists surface cracking and black mould, common issues with traditional wooden hangiri. The rim is reinforced to prevent damage from repeated use, and the material withstands temperatures up to 90 °C without warping. The bowl's dimensions—600 mm in diameter and 140 mm in height—provide ample space for mixing large batches while keeping the profile low enough for easy handling.
