This calibration machine shapes minced meat, fish, or vegetables into uniform blocks by forcing the mixture through a die under controlled pressure. In a commercial kitchen, this uniformity streamlines service and minimises waste, as every block cooks evenly and fits standard serving sizes.
The user fills the hopper with the prepared mixture, chooses the portion size via the control panel, and initiates the cycle. A feed screw moves the mass to the die, where a hydraulic or pneumatic ram compresses it into the selected mould. Once formed, the block is ejected onto the work surface or into a tray. The machine continues this process automatically until the hopper is empty or the cycle is stopped.
Constructed from stainless steel, the Calklin 200 is designed for hygiene and long-term use. It integrates a hopper, feed screw, die assembly, and ejection mechanism into a single compact unit that fits on a typical worktop.
The control panel provides portion selection and start/stop controls. Each setting aligns with one of the five moulds, each set to produce a 200 g block.
The machine's capacity allows it to form multiple 200 g portions in one cycle, making it suitable for medium-volume operations without taking up excessive space.
Cleaning involves disassembling the hopper, feed screw, and die assembly, washing them in hot soapy water, rinsing, and drying before reassembly. The stainless steel components are resistant to corrosion and can be sanitised with standard kitchen cleaning agents.
