The shelves rely on gravity and a slight forward tilt to hold loaves and rolls in place without rails or dividers. Each shelf can be raised, lowered or angled independently, so the operator can accommodate tall baguettes, shallow trays of pastries or irregular artisan shapes. The base cabinet adds a fifth shelf that slides out for restocking or for displaying larger items such as celebration cakes or seasonal specials.

To use the cabinet, the operator first sets the height and angle of each shelf to suit the day's products.
