A chrome-plated grid supports gastronorm trays inside commercial ovens, raising them above the oven floor so hot air circulates freely underneath. This circulation prevents cold spots and ensures food cooks evenly across the entire tray, whether roasting vegetables, baking pastries or holding pre-cooked dishes at serving temperature.
The grid rests directly on the oven rails, and the standard GN2/1 size matches the most common full-size gastronorm tray. An operator slides the tray onto the grid, closes the oven door and sets the required temperature and timer. Once the cycle finishes, the tray lifts off the grid without scraping or sticking, leaving the grid in place for the next load.
The frame is made of iron wire welded into a rigid lattice, then electroplated with a layer of chromium. The plating resists corrosion from steam and cleaning chemicals, and the smooth surface makes it easy to wipe down between uses. The grid's open construction allows air to flow through the gaps, so it does not block the oven's convection fan or heating elements.
Overall dimensions of 530 by 350 mm correspond to the GN2/1 gastronorm standard, so the grid fits ovens, holding cabinets and mobile racks built to that specification. The 2.3 kg weight keeps the grid stable on the rails without adding significant load to the oven's internal structure.
After service, the grid is removed from the oven and washed with warm water and a mild detergent. The chrome plating prevents rust, but abrasive pads or wire brushes should be avoided to preserve the finish. Once dry, the grid is stored flat or hung on a rack to prevent bending.
