A perforated gastronorm tray allows air and liquids to circulate freely around food during storage, cooking or chilling. The pattern of small holes across the base and sides lets hot or cold air move evenly, speeding up processes like blast freezing or convection baking. Liquids drain away, keeping ingredients drier and reducing the risk of soggy textures or bacterial growth. The tray's standard GN1/1 footprint fits directly into gastronorm racks, trolleys and combi-ovens, so it slides in and out without lifting or transferring contents.
To use, place the tray on a worktop or into a compatible rack. Load ingredients evenly, leaving space between items for air to flow. Slide the tray into the oven, chiller or storage unit. After use, remove the tray and allow it to cool if necessary. The perforations make it easier to shake out crumbs or rinse away juices, but they also mean the tray cannot hold loose powders or very small items that would fall through.
The tray is made of stainless steel, which resists corrosion, does not absorb odours and withstands repeated washing at high temperatures. The 6 cm depth provides enough volume for a single layer of larger items like joints of meat, whole fish or trays of vegetables, while keeping the overall height low enough to stack multiple trays in a standard rack.
Controls are not applicable; the tray is a passive container. Its 530 x 325 mm footprint matches the GN1/1 standard, so it fits any equipment designed for that size, including combi-ovens, blast chillers, bain-maries and storage trolleys. The 6 cm height determines how much volume it holds and how many trays can be stacked in a given space.
Cleaning involves rinsing under a tap or placing the tray in a dishwasher. The perforations allow water to flow through, speeding up drying and reducing the risk of water spots. Stainless steel does not require seasoning or special treatment, but it should be dried thoroughly to prevent water marks and maintain its appearance.
