A heating element converts electrical energy into heat within a combi oven, raising the temperature of the air that the fan circulates. The element sits inside the cooking chamber, shielded by a metal sheath that protects it from steam and food particles while allowing heat to radiate evenly. This method ensures rapid, uniform heating across all trays, enabling baking, roasting and steaming programmes to run at consistent temperatures.
To install the element, the oven is first isolated from the electrical supply. The operator removes the rear panel or side access cover, disconnects the wiring from the old element, and unbolts the flange. The new element is positioned so the 200 mm immersed length extends into the chamber, the 82x82 mm flange aligns with the mounting plate, and the bulb sheath faces the airflow. The flange is bolted back, the wiring reconnected, and the cover replaced. After a test run at low temperature, the oven returns to service.
The element is constructed from a resistance wire encased in a corrosion-resistant metal sheath. The 82x82 mm flange provides a secure seal against the oven wall, preventing steam from reaching the electrical connections. A bulb sheath surrounds the active section, directing heat into the chamber and protecting the element from direct contact with food or cleaning chemicals.
