LF PT100 Glass Fibre Probe 3000 mm for Professional Ovens

A PT100 temperature probe measures the heat inside a convection oven by using a thin platinum wire whose electrical resistance changes predictably with temperature. The probe's sensor sits inside a slender glass-fibre rod that carries the signal back to the oven's control board without picking up stray heat from the surrounding air. This method gives the oven an accurate reading of the actual temperature at the food, not just the air around it, so the cooking programme can adjust the fan and heating elements precisely for even results every cycle.

The probe is inserted through a port in the oven's cavity wall until the sensing bulb reaches the centre of the load. Once the oven door is closed and the programme started, the control board continuously monitors the resistance of the PT100 element and converts it into a temperature reading. If the reading drifts outside the set range, the board modulates the heating elements or fan speed to bring the temperature back on target. When the cycle finishes, the probe is withdrawn and the oven door opened to remove the cooked food.

Construction is a 3000 mm glass-fibre cable terminating in a stainless-steel bulb 6 mm in diameter and 100 mm long. The cable is flexible enough to route through the oven's cable gland yet rigid enough to keep the bulb in position once inserted. The 0–350 °C range covers every cooking mode from gentle proofing to high-temperature roasting, so the same probe can be used for all programmes the oven offers.

The 3000 mm length allows the probe to reach the centre of large combi ovens and still leave enough cable outside for connection to the control board. The stainless-steel bulb resists corrosion and thermal shock, while the glass-fibre sheath protects the internal wiring from moisture and mechanical stress. No additional calibration is required; the probe is factory-standardised to the PT100 curve and plugs directly into the oven's existing socket.

Cleaning is limited to wiping the bulb and cable with a damp cloth after each use to remove grease or food residue. The glass-fibre sheath must not be bent sharply or exposed to temperatures above 350 °C, as this can damage the internal conductors and affect accuracy.

This probe is a direct replacement for the original PT100 sensor in Berto's, Finox, Giorik and Lainox convection ovens, including electric and gas models listed in the compatibility tables.
