The machine heats water in a pressurised boiler, forcing it through tightly packed coffee grounds at controlled temperature and pressure. This extraction method captures the oils, aromas and soluble compounds that define espresso, producing a rich crema and balanced flavour profile. The boiler's volume supports continuous operation without frequent refilling, while the inbuilt pump maintains steady pressure throughout each shot, preventing under-extraction or bitterness.
Operation begins by loading fresh coffee into the portafilters and locking them into the two brew groups. The operator selects a pre-set dose on the volumetric touch pads—each group offers four programmable volumes from 0 to 3000 cc—or chooses continuous brewing for larger batches. The electronic auto-fill system monitors water levels and refills the boiler automatically, shutting off if the supply runs low to prevent damage. A programmable hot water dispenser provides instant water for tea or Americanos, while the single steam wand froths milk for cappuccinos and lattes. Safety features include a thermostat that cuts power if the boiler overheats, ensuring stable temperatures during peak service.
