An electric stove built for continuous service in professional kitchens, the MBM DOMINA PRO 700 supplies direct heat through solid cast iron hot plates. Each plate is a thick disc or square of iron that absorbs electrical energy from its embedded element and radiates it evenly into pots and pans. Because iron has high thermal mass, the plates retain heat and smooth out temperature fluctuations, giving steady cooking even when loads change. A safety device cuts power if the plate exceeds a set temperature, preventing damage and fire risk. The plates are sealed to the worktop so that spills cannot seep underneath, simplifying cleaning and protecting the wiring.
The operator selects a plate by switching it on; an indicator light confirms it is live. Three plate shapes are offered: small rounded plates of 145 mm and 200 mm diameter, a square 220 mm plate, and a larger lowered square of 300 mm. Each size suits a different pan base and cooking task, from simmering sauces on the smallest to searing on the largest. The plates heat quickly, reducing waiting time between batches.
The stove is powered from a 400 V three-phase supply, the standard for heavy catering equipment in commercial kitchens. This voltage spreads the electrical load across three live conductors, allowing higher power without overloading a single circuit. The total power rating of 8.2 kW reflects the combined draw of all plates running simultaneously, so the kitchen must have a circuit capable of supplying that load continuously.
The unit measures 700 mm across the worktop, 730 mm deep and 250 mm high, fitting into a standard worktop run or standing alone on legs. Its 40 kg weight means it can be moved by two people or with a trolley, but it is not portable in the way a domestic appliance is. The footprint and weight together determine where it can be installed and how easily it can be repositioned during kitchen reorganisations.
Cleaning is straightforward: the cast iron plates can be wiped while warm, and the sealed worktop prevents liquids from reaching internal parts. The indicator lights help the operator track which plates are live, avoiding accidental burns during cleaning or when changing pans.
