2 burners, gas solid top 10 kW
A gas solid top provides direct, radiant heat from a thick cast iron plate that retains and distributes warmth evenly across its surface. Unlike open burners, the solid plate absorbs heat from the gas flame beneath and holds it, smoothing out temperature fluctuations and creating a stable cooking zone. This method is particularly effective for searing, grilling, and slow-cooking dishes where consistent contact with the heat source matters. The plate's mass ensures that heat lingers even after the flame is reduced, allowing for controlled cooking without sudden drops in temperature.
To operate the MBM Domina Pro 700, the gas supply is connected and the main valve opened. The piezo-electric ignition is pressed to light the burner beneath the central ring. The thermostatic control is adjusted to set the desired heat level, which regulates the gas flow to maintain the temperature. The removable central ring can be lifted to access the burner for cleaning or to adjust the flame manually if needed. Once the plate reaches the set temperature, pots, pans, or griddles are placed directly on the cast iron surface. The even heat distribution allows multiple items to be cooked simultaneously without hot spots, making it suitable for batch cooking in busy kitchens.
The cooking surface is a 40 dm² cast iron plate, 10 mm thick, which provides durability and heat retention. The burner beneath is stainless steel, rated at 9 kW, and positioned under the removable central ring. Piezo-electric ignition eliminates the need for external lighters, while the thermostatic control ensures the temperature remains steady once set. The unit measures 1100 mm in width, 730 mm in depth, and 250 mm in height, fitting into standard worktop configurations. At 100 kg, it is a heavy-duty appliance designed for fixed installation, requiring a stable surface to support its weight.
The 24 kW gas power rating indicates a high-output appliance suitable for commercial kitchens with adequate gas supply lines. The footprint of 1100 by 730 mm allows it to be integrated into existing kitchen layouts, while the 250 mm height ensures compatibility with standard worktop heights. The 100 kg weight means it is not easily moved, reinforcing its role as a permanent fixture in a professional kitchen.
Cleaning involves removing the central ring to access the burner and wiping down the cast iron plate after each use to prevent food residue from burning onto the surface. The stainless steel burner should be checked periodically for blockages or grease build-up. The thermostatic control and piezo ignition require no regular maintenance beyond ensuring they remain free of debris.
The Domina Pro 700 is part of the MBM professional catering range, positioned as a robust, high-capacity cooking solution for restaurants, hotels, and large-scale catering operations.
