A gas stove range built for continuous service in professional kitchens, the MBM Domina Pro 700 combines a heavy-duty cast iron hob with a powerful gas oven beneath. Gas burners heat the hob surface directly, transferring energy through the thick cast iron to pots and pans without hot spots. The oven uses a self-stabilising gas flame to maintain even temperatures across the stainless steel chamber, while a double-wall door with insulation keeps heat inside and the kitchen cooler.
The operator lights the hob burners with piezo-electric ignition, eliminating the need for matches or external lighters. Each burner is controlled by a thermostat that holds the set temperature, adjusting the gas flow automatically. On the oven, a separate thermostat and safety valve regulate the flame, while a thermocouple cuts the gas if the flame fails. The oven's 3 GN 2/1 rack supports allow trays to be slid in and out without tipping, accommodating standard gastronorm trays for bulk cooking.
The hob is a single 40 dm² cast iron plate, 10 mm thick, with a removable central ring that exposes the 9 kW burner beneath. This design allows the hob to handle both large stock pots and smaller pans without wasting energy. The oven chamber is stainless steel with an enamelled bottom, resisting corrosion and making spills easier to clean. The door is also stainless steel, double-walled to reduce heat loss and protect staff from burns.
Controls include a piezo ignition button for the hob burners, individual thermostatic knobs for each burner, and separate oven controls for temperature and flame safety. The 50 kW gas input requires a dedicated commercial gas line, ensuring the unit can sustain high-output cooking during peak service. The 1100 mm width fits standard kitchen worktop layouts, while the 320 kg weight means the range must be positioned on a reinforced floor or spreader plate to avoid structural damage.
Cleaning involves removing the central hob ring to access the burner, wiping the cast iron surface with a damp cloth, and brushing out food debris from the burner ports. The oven's stainless steel interior can be wiped down after each use, while the enamelled bottom resists baked-on residue. The double-wall door should be cleaned regularly to maintain its insulating properties.
The Domina Pro 700 is available in gas-only or dual-fuel configurations, with the option of a standard or maxi oven. All versions include the same 40 dm² cast iron hob and 3 GN 2/1 rack support system.
