Electric fryer 18 liter with total power 16 kW
An electric fryer heats a volume of oil to a set temperature, then holds it steady while food is lowered in a basket. The oil transfers heat rapidly into the food, cooking it evenly and quickly without drying the surface. A thermostat cycles the heating elements to maintain the chosen temperature, while a cold zone beneath the elements collects debris that would otherwise burn and spoil the oil. This method keeps the oil usable for longer service intervals and gives consistent results across batches of chips, fish, chicken or doughnuts.
The operator fills the 18 L tank with fresh oil, closes the drain valve and sets the thermostat between 90 °C and 190 °C. Once the oil reaches the target, the fryer holds it ready. Food is loaded into the basket, which is lowered into the hot oil. A timer or visual check signals when the food is done; the basket is lifted, drained and emptied. After service, the oil is cooled, filtered and drained through the front outlet into a collection tank, leaving the interior ready for cleaning.
The fryer is built in AISI 304 18/10 stainless steel of 2 mm thickness. The tank is moulded with rounded corners and fixed to the worktop with continuous welding, eliminating crevices where food particles could lodge. Armoured electric heating elements inside the tank tilt outwards for thorough cleaning. A large cold zone beneath the elements traps debris and extends oil life. A safety thermostat cuts power if the oil overheats, while the main thermostat regulates temperature between 90 °C and 190 °C.
Controls consist of a thermostatic dial for oil temperature and a safety thermostat reset. The front drainer simplifies oil changes and cleaning, and a stainless-steel filter on the outlet prevents debris from entering the collection tank.
A 16 kW power rating requires a 400 V 3-phase circuit, the standard supply for heavy-duty catering equipment. The 50 kg weight allows the unit to be moved with a trolley but is stable on a solid worktop. The 400 mm width, 900 mm depth and 580 mm height fit a standard worktop space, while the 300 mm by 400 mm tank footprint gives ample frying area without overcrowding.
Cleaning involves draining the oil, tilting the heating elements outwards, scrubbing the tank and cold zone, rinsing and drying. The rounded corners and continuous welds speed the process.
