An electric stove built for continuous service in professional kitchens, the MBM DOMINA PRO 900 converts electrical power directly into radiant heat across two large cast-iron hot plates. The plates are heated by embedded elements that reach working temperature quickly and maintain it evenly, allowing rapid searing, boiling or simmering without flame or combustion gases. Because the heat is generated beneath the cooking surface, there is no open burner to block or direct heat away from the pan, so energy is used efficiently and the kitchen stays cooler.
The operator selects the desired plate, places a pan on it and turns the corresponding control knob. A safety device inside each plate cuts power if the temperature rises beyond safe limits, preventing damage to the element and reducing fire risk. Indicator lights above the knobs show which plates are active, so staff can see at a glance which surfaces are hot without touching them. The plates are sealed to the worktop, stopping liquids from seeping underneath and making the unit easier to clean.
Each hot plate measures 300 mm square and is rated at either 3 kW or 4 kW, giving the flexibility to run a high-demand task on one plate while keeping a gentler process on the other. The stove is supplied at 400 V three-phase, which spreads the 6 kW load evenly across the phases and keeps the current draw within the capacity of a standard commercial circuit. The footprint of 400 mm front-to-back and 900 mm side-to-side fits neatly into a run of worktop, while the 250 mm height matches standard counter levels for comfortable working posture. At 68 kg the unit is stable on the floor but light enough to be moved by two people when the kitchen layout changes.
The worktop and sides are stainless steel, chosen for resistance to heat, moisture and cleaning chemicals. Cast iron plates retain heat well and distribute it evenly across the cooking surface, reducing hot spots that can scorch food. The controls are simple rotary knobs, one per plate, with no digital display or programme to set—each knob adjusts the heat output continuously from low to high.
Cleaning is straightforward: after the plates have cooled, the sealed construction allows the worktop to be wiped down without water entering the electrical parts. The cast iron surfaces can be scrubbed with a non-abrasive pad and detergent, then dried to prevent rust. Regular inspection of the indicator lights and safety cut-outs ensures the stove remains safe and ready for service.
