A gas fryer heats a deep bath of oil with a high-output stainless steel burner positioned beneath the tank. The burner's horizontal flame spreads heat evenly across the base, raising the oil to frying temperature quickly and holding it steady. A safety valve and thermocouple monitor the flame; if it fails, the gas supply shuts off automatically. The pilot flame and piezoelectric ignition ensure the burner lights without manual intervention, so the operator can focus on timing and portion control.
The operator lowers a stainless steel basket filled with food into the hot oil. A thermostatic control keeps the temperature within safe limits, preventing overheating that can degrade oil or create fire risks. Once the food reaches the desired colour and texture, the basket is lifted clear and drained over the tank. A large front drainer catches any residual oil, directing it back into the fryer or into a separate collection tank fitted with a stainless steel filter for easy disposal.
The fryer's tank is made from 18/10 AISI 304 stainless steel, moulded in one piece with continuous welds and rounded corners. This construction eliminates crevices where food debris or oil can collect, making daily cleaning faster and more thorough. A 1 mm worktop of the same stainless steel surrounds the tank, providing a durable surface for placing baskets and utensils. The entire unit stands on adjustable feet, allowing the operator to level it on uneven floors.
Controls include a safety thermostat that cuts power if the oil exceeds a preset maximum, and a thermostatic temperature control that maintains the chosen frying temperature. The gas version features an automatic ignition system with a pilot flame and piezoelectric spark, removing the need for matches or lighters.
The 20.5 kW gas input requires a dedicated gas line capable of supplying the full load without pressure drop. The 230 V 1N electrical connection powers the ignition and control circuits, but the primary heating comes from gas, so the unit does not draw heavy current from the mains. The 20.5 litre oil capacity allows large batches of chips, fish or other fried items to be cooked in a single load, reducing the number of refills during service. The 69 kg weight means the fryer is moved with a trolley or two people, and the 400x900 mm footprint fits neatly against a wall or between other worktop appliances.
Cleaning involves tilting the heating elements clear of the tank, wiping down the rounded corners and worktop, and using the front drainer to empty the oil through the stainless steel filter. The continuous-welded seams prevent water or cleaning agents from seeping behind panels, so the interior stays sanitary with routine wiping and sanitising.
