A gas fryer heats two independent vats of oil with direct flame burners beneath each tank. The heat rises through the base, warming the oil evenly from below. A thermostatic control cycles the burners to hold the set temperature, while a safety thermostat cuts the gas if the oil overheats. This method gives rapid recovery of heat after food is added, keeping consistent frying conditions for high-volume service.
The operator loads each 18 L vat with fresh oil, then ignites the burners and sets the desired temperature on the control panel. Once the oil reaches the set point, the fry baskets are lowered into the tanks. The digital display—where fitted—shows the current temperature and allows the cooking time to be programmed. After frying, the baskets are lifted, drained over the vat and emptied. Used oil is drawn off through a stainless steel filter into a collection tank at the front, simplifying disposal and cleaning.
The fryer is built on a closed stand of welded steel, clad in 18/10 AISI 304 stainless steel. The tanks are moulded with rounded corners and continuous welds to eliminate crevices where food debris could lodge. A large front drainer catches drips and makes cleaning easier. The gas inlet and safety devices are housed behind a removable panel for access during maintenance.
The 36 kW gas input requires a dedicated commercial gas line capable of supplying the full load without pressure drop. The 800 mm width and 900 mm depth fit a standard worktop footprint, while the 1180 mm height allows the operator to reach the controls and baskets without stretching. The 114 kg weight means the unit is moved on a trolley or with two people, and once in place it remains stable during daily use.
Cleaning involves draining the oil, wiping the tanks with a non-abrasive pad and sanitiser, and rinsing the rounded corners. The stainless steel filter and collection tank are removed, cleaned separately and replaced. The front drainer and exterior panels are wiped down daily to maintain hygiene standards.
