A gas-fired cooking plate on an open stand heats food directly on a heavy cast-iron surface. Gas burns beneath the plate, raising its temperature evenly across the entire cooking area. The cast iron absorbs the heat and holds it, smoothing out fluctuations so that every part of the surface reaches and maintains the set temperature. This method gives immediate response when the control is adjusted and keeps the heat steady while pans are moved or ingredients added.
The operator places a pan on the 50 dm² cooking surface, turns the thermostatic knob to the desired setting, and presses the piezo ignition button to light the burner. The flame heats the cast-iron plate, which in turn transfers the heat to the pan. Once the food is cooked, the pan is removed and the control turned off. The open stand keeps the plate at a comfortable working height and allows air to circulate freely around the burner, ensuring efficient combustion and quick cooling after use.
The cooking surface is a single 10 mm thick cast-iron plate with a removable central ring. Underneath, a 12 kW stainless-steel burner distributes the flame evenly. Piezo-electric ignition eliminates the need for matches or external lighters, and the thermostatic control maintains the chosen temperature without constant adjustment. The entire unit measures 800 mm deep, 900 mm wide and 850 mm high, and weighs 100 kg, making it stable on the floor while still allowing it to be moved with a trolley when needed.
The 12 kW power rating indicates the load on the gas supply; a professional kitchen must have a gas line and regulator sized to deliver this flow. The 50 dm² surface area provides ample space for multiple pans or a single large tray, while the 10 mm cast-iron thickness ensures the plate does not warp or crack under repeated heating and cooling. The open stand design means no cupboard or shelf is required beneath the plate, simplifying installation and cleaning.
After each service, the removable central ring is lifted out and cleaned separately. The cast-iron surface is wiped down while still warm, then allowed to cool before a final scrub to remove any residue. The stainless-steel burner and stand can be wiped with a damp cloth, and the piezo ignition and thermostatic knob are kept dry to prevent corrosion.
