A gas stove range built for continuous service in professional kitchens, the MBM Domina Pro 900 combines a heavy-duty cast-iron hob with a powerful gas oven beneath. Gas burners heat quickly and respond instantly to the chef's adjustment, making them the preferred choice where precise temperature control and rapid recovery are essential. The hob's cast-iron surface distributes heat evenly across its 40 dm² area, preventing hot spots and allowing consistent results across multiple pans. Below, the gas oven uses a self-stabilising burner to maintain a steady flame, ensuring even baking and roasting without the temperature swings that can occur in less stable systems. The sequence of use begins with lighting the hob. A piezo-electric ignition system eliminates the need for external lighters, sparking the burner with a single push. The central 9 kW burner is accessed by removing a cast-iron ring, revealing a high-output flame for rapid boiling or searing. Once the hob is lit, the oven is started in the same way: piezo ignition, thermostatic control, and a safety valve that cuts the gas if the flame fails. Inside the oven, three GN 2/1 rack supports hold full-size gastronorm trays, allowing the chef to load multiple dishes at once. The oven's double-wall door and insulating casing reduce heat loss, keeping the kitchen cooler and improving energy efficiency. Construction centres on durability. The hob is a single 10 mm-thick cast-iron plate, chosen for its ability to withstand the thermal shock of repeated heating and cooling. The burner assembly is stainless steel, resistant to corrosion and easy to clean. The oven chamber is also stainless steel, with an enamelled bottom that protects against spills and simplifies scrubbing. The entire unit is housed in a stainless-steel frame, giving it the rigidity needed to support 180 kg without flexing. Controls are straightforward and robust. A thermostatic knob on the hob adjusts the flame, while the oven has separate controls for temperature and flame safety. The 400 V three-phase supply powers the piezo ignition and any auxiliary components, such as oven lights or fans, if fitted. The 37 kW total power rating reflects the combined output of the hob and oven, indicating the load the kitchen's gas and electrical supplies must support. The 1200 mm width provides ample space for multiple pans, while the 900 mm depth fits standard worktop depths without overhang. The 850 mm height matches most professional kitchen counters, allowing the chef to work comfortably without bending. The 180 kg weight means the unit must be positioned on a solid floor or reinforced base, and moved only with a trolley or pallet jack. The thick cast-iron cooking surface shrugs off spills and wipes clean between services without warping or staining. The cast-iron hob can be scraped and wiped while still warm, but should not be soaked or left wet to avoid rust. The stainless-steel burner and oven chamber are wiped with a damp cloth and mild detergent, avoiding abrasives that could scratch the surface.
