An electric fryer heats a measured volume of oil to a set temperature, then holds it steady while a basket of food is lowered into the oil. The oil transfers heat quickly and evenly, cooking the food through without drying it out. A cold zone beneath the heating elements collects debris, keeping the oil cleaner and extending its usable life.
