An electric twin fryer divides its 18 kW heating power between two 10 litre tanks, letting a professional kitchen fry separate batches at once without flavour transfer. Incoloy stainless steel elements sit below the oil, heating it evenly from the base. A thermostat cycles the elements on and off to hold the oil at the set temperature, while a safety valve and a second thermostat cut power if the oil overheats. The cold zone beneath the elements collects food debris, keeping the oil cleaner and extending its working life.
The operator fills each tank with 10 litres of oil, then sets the thermostat between 90 °C and 190 °C. A warning light shows when the elements are heating. Once the oil reaches temperature, the chromium-plated steel baskets are lowered into the tanks. After frying, the baskets lift out and the oil drains through a tap at the base of each tank, ready for filtering or replacement.
The fryer is built from AISI 304 stainless steel, with a hinged lid that reduces heat loss and splashing. The 600 mm width and depth fit a standard worktop, while the 41 kg weight allows two people to move it without a trolley. A 400 V three-phase supply is required, matching the circuit used by most commercial kitchens for high-power appliances.
Thermostatic control between 90 °C and 190 °C covers everything from gentle blanching to deep frying. The 18 kW power rating means the oil recovers temperature quickly between batches, so service stays fast even during peak demand. The cold zone and drain tap simplify daily cleaning, while the stainless steel construction resists corrosion and stands up to frequent washing.
The EF66 is a twin-tank fryer with independent controls for each 10 litre vat, allowing two different frying programmes to run at the same time.
