An electric bench fryer designed for confectionery work, the MBM EF60BP heats oil in a shallow basin so that doughnuts, churros and other battered items cook evenly without absorbing excess fat. The element sits below the oil, transferring heat through the liquid; a cold zone beneath collects sediment and prevents it from burning, which keeps the oil cleaner for longer.
The operator fills the basin with oil to the marked level, then sets the adjustable thermostat to the required temperature. Once the oil reaches the set point, the baskets are loaded with product and lowered into the oil. The athermic handles stay cool to the touch, allowing safe handling. A safety thermostat cuts power if the oil overheats, preventing fire risk. When the items are golden and crisp, the baskets are lifted out and drained over the basin before the next batch is started.
The fryer is built as a freestanding bench unit with a stainless steel worktop that resists corrosion and wipes clean quickly. The baskets are chromium-plated steel, which sheds oil and resists staining. The cold zone at the base of the basin collects tailings that settle out of the oil, reducing the frequency of oil changes and keeping the flavour of the food consistent.
Controls consist of an adjustable thermostat to set the frying temperature and a safety thermostat that acts as a high-limit cut-out. The 9 kW power rating requires a three-phase 400 V supply with neutral and earth, the standard circuit for professional kitchen equipment of this size. The 34-37 litre oil capacity allows continuous production of small confectionery items without frequent topping-up. The unit weighs 29 kg, light enough for two people to move but stable on the worktop. Its footprint of 750 by 775 mm fits on most commercial work surfaces, leaving space for preparation alongside.
Cleaning involves draining the oil, wiping down the worktop and baskets, and brushing out the cold zone to remove accumulated sediment. The chromium-plated baskets can be washed in hot water with detergent, while the stainless steel surfaces are wiped with a damp cloth and sanitised. The cold zone should be checked daily to prevent build-up that could affect oil quality.
