A pasta cooker boils water in a dedicated tank to cook long and short pasta shapes evenly without sticking. Heating elements beneath the tank raise the water temperature rapidly, while a thermostat maintains the set level and a safety thermostat cuts power if the water overheats. The large volume of water ensures that the temperature recovers quickly when pasta is added, keeping the cooking time consistent and the strands separate.
The operator fills the tank with cold water through an electric valve, then sets the power level on a four-position switch. Once the water reaches the working temperature, the pasta is lowered in a basket. The basket's thermal handle allows safe handling, and the rounded corners of the tank make it easy to lift the basket out without catching. After cooking, the basket is drained and the pasta transferred to a serving or holding area.
The tank is made of AISI 316 anti-corrosion stainless steel, chosen for its resistance to salt and acids in pasta water. The heating elements are armoured in stainless steel to protect them from corrosion and mechanical damage. Optional pasta baskets are fabricated from AISI 304 18/10 stainless steel, a grade that balances durability and hygiene.
A four-position power switch adjusts the heating rate, allowing the cook to match the load to the quantity of pasta. The operating thermostat keeps the water at the selected temperature, while the safety thermostat prevents overheating if the water level drops or the primary control fails.
The 13.3 kW power rating indicates the load on the electrical circuit; this unit requires a dedicated 230 V single-phase supply with adequate capacity. The 40 litre volume sets the maximum batch size, while the 700 mm width and 730 mm depth determine the space it occupies on the worktop. The 60 kg weight means the unit is moved with a trolley or by two people, and it must stand on a sturdy surface that can support the load when full.
Cleaning involves draining the tank, wiping the rounded corners and heating elements with a soft cloth, and rinsing the baskets. The electric valve simplifies water changes, and the absence of sharp edges reduces the risk of trapped food particles.
The CPG77T is listed in the professional catering catalogue under electric pasta cookers.
