A tilting electric pan distributes heat evenly across a broad, shallow stainless steel tank, allowing chefs to braise, sauté, fry, simmer or steam large batches without hot spots. Armoured heating elements mounted beneath the tank transfer energy directly into the metal, which then radiates warmth into the food. The low sides and wide base give maximum contact between the cooking surface and the ingredients, speeding heat transfer and cutting cooking times while keeping fuel costs down.
To begin, the operator fills the 50 L tank with oil, water or stock to the required depth, then sets the thermostat anywhere between 50 °C and 300 °C. Once the target temperature is reached, the pan holds it automatically. Ingredients are added directly to the tank or lowered in a basket; the balanced stainless steel lid can be left open for stirring or closed to retain steam. When the dish is finished, the manual tilt mechanism lets the chef pour contents straight into a serving tray or gastronorm pan without lifting or tipping the entire unit. A water-load tap on the front panel simplifies refilling and cleaning.
The entire structure is built from AISI 304 18/10 stainless steel with a scotch-brite finish that resists fingerprints and scratches. The tank walls and bottom are the same grade, while the rounded corners and shaped front edge are designed to eliminate food traps and speed unloading. The lid swings on robust stainless steel hinges and is fitted with an ergonomic front handle for safe one-handed operation.
A 9 kW power rating means the pan draws a substantial current, so it must be connected to a 400 V three-phase circuit with neutral and earth. The 118 kg weight requires a sturdy worktop or a purpose-built stand; the 800 mm × 714 mm footprint fits standard kitchen modules but needs clear space around it for safe tilting. The 50 L volume allows bulk cooking while keeping the unit compact enough for most professional kitchens.
Cleaning is straightforward: after each service the tank is emptied, wiped down and rinsed. The rounded corners and smooth welds prevent food from sticking, and the external heating elements avoid the need to scrub inside heating tubes. The manual tilt mechanism should be checked periodically for smooth operation, and the lid hinges kept free of debris.
