An electric fryer heats cooking oil with submerged heating elements, transferring energy directly into the oil. The hot oil surrounds the food in the basket, cooking it evenly and quickly while creating a crisp exterior. Twin vats allow two different foods or batches to be fried at once, each with its own temperature setting, so the kitchen can keep up with service without mixing flavours or waiting for one batch to finish.
The operator lowers the basket into the preheated oil, sets the thermostat to the required temperature, and starts the timer. The fryer maintains the oil temperature automatically, so the food cooks at a steady rate. Once the timer signals, the basket is lifted out and drained over the vat, then the food is transferred to a tray or holding station. The large front drainer catches any oil that drips from the basket, keeping the worktop clean.
The fryer is built from 18/10 AISI 304 stainless steel, with moulded, continuous-welded tanks that have rounded corners for easy cleaning. The 1 mm worktop is also stainless steel, aligned with the joints for a smooth surface. Inside each vat, armoured stainless steel heating elements tilt out for thorough cleaning. A safety thermostat and a thermostatic temperature control keep the oil within safe limits, while a stainless steel filter in the oil collection tank prevents debris from entering the drain.
The 18 kW power rating is split into two 9 kW circuits, each serving one vat. This requires a 400 V 3-phase supply, the standard for heavy-duty catering equipment in professional kitchens. The 72 kg weight means the unit is moved with a trolley or two people, while the 700 mm width fits into a standard worktop run without overhang. Each vat holds 13 litres of oil, enough for a full basket of chips, fish or other fried items without crowding.
Cleaning involves tilting the heating elements out of the vats, wiping down the rounded corners, and rinsing the stainless steel filter in the oil collection tank. The large front drainer is removed and washed separately. The oil is drained through the outlet system into a container, ready for disposal or filtering.
