An electric grill heats a solid metal plate from below, transferring energy directly into the food. The plate's mass holds and spreads the heat evenly, so each portion cooks at the same rate without hot spots. Because the heat comes from the plate itself, there is no open flame or moving air to dry the surface; instead, the food sears quickly, locking in moisture and developing a crisp exterior. The operator controls the temperature across the entire plate, allowing different items to be cooked side by side when the grill is divided into independent zones.
The MAGISTRA PLUS 700 is loaded by placing food directly onto the 70 cm chrome cooking plate. The operator sets the desired temperature for each zone, if fitted, and the grill reaches working heat within minutes. Food is turned or moved as needed, and excess fat drains into a removable stainless-steel basin beneath the plate. Once cooking is complete, the food is lifted off, and the basin can be taken out for emptying and cleaning.
The cooking plate is 15 mm thick steel with a polished chrome finish. Chrome resists sticking, so flavours do not transfer between batches, and the surface stays cleaner between uses. Heat loss is reduced, keeping the kitchen cooler. A 1 mm worktop of AISI 18/10 stainless steel surrounds the plate, with seamless joints for hygiene. The removable basin holds up to 2 litres of grease and can be lifted out without tools.
The grill requires a 400 V three-phase supply, drawing 8 kW. This load is typical for a commercial circuit, allowing the grill to reach full temperature quickly and maintain it under continuous use. The unit measures 700 mm wide, 714 mm deep and 850 mm high, fitting a standard worktop space. At 97 kg, it is moved with a trolley or two-person lift, and once in place it remains stable during operation.
Cleaning involves wiping the chrome plate after each service, removing the grease basin for emptying, and washing the stainless-steel worktop. The chrome finish reduces the need for scrubbing between different foods, and the smooth surfaces allow quick sanitising at the end of the day.
