A pasta cooker heats water to a rolling boil, then lowers perforated baskets of dried pasta into the turbulent bath. The constant circulation of hot water around each strand prevents sticking and ensures even cooking, while the high thermal mass of the water maintains temperature despite the cold load. This method delivers consistent texture and doneness without stirring or skimming, freeing the operator for other tasks.
To begin, the operator fills the 26 litre tank with cold water through the electric valve. The four-position power switch is set to the desired intensity, and the operating thermostat brings the water to the boil. Once the safety thermostat confirms the temperature is stable, the pasta baskets are lowered into the tank. The thermal handles remain cool to the touch, allowing safe handling. After the programmed cooking time, the baskets are lifted out and drained over the tank, returning excess water to the reservoir for the next batch.
The tank is moulded from AISI 316 anti-corrosion stainless steel with rounded internal corners to eliminate crevices where starch can collect. The 1 mm worktop is AISI 18/10 stainless steel, aligned flush with the tank edges to prevent spills from seeping underneath. Armoured stainless steel heating elements are submerged below the water line, protected from damage and easy to replace without draining the tank.
A four-position power switch adjusts the heating rate, allowing the operator to match the load to the volume of pasta. The operating thermostat maintains the set temperature, while the safety thermostat cuts power if the water overheats, preventing boil-dry and element failure. The 400 V three-phase supply delivers the 5.5 kW load without overloading a single circuit, a requirement for most commercial kitchens.
The 44 kg weight ensures the unit stays stable on the worktop during vigorous boiling. The 400x714x850 mm footprint fits between standard worktop sections, leaving space for adjacent prep areas. Cleaning involves draining the tank, wiping the rounded corners with a soft brush, and rinsing the worktop to remove starch residue. Optional AISI 304 18/10 stainless steel pasta baskets are dishwasher-safe and compatible with the thermal handles.
