An electric stove transfers energy directly from heating elements to cast-iron hot plates, creating a stable, high-heat surface for frying, boiling, simmering and sautéing. The elements are embedded beneath the plates, so the heat rises evenly across the cooking area without open flames or combustion gases. A thermostat cycles the power to maintain the chosen temperature, while indicator lights show which plates are active, letting the chef monitor the stove at a glance.
The operator places pots or pans on the 300 mm square hot plates, selects the desired heat level with the 6-position thermostat plus an off setting, and starts cooking. The safety device cuts power if the plate overheats, preventing damage to the element or the food. Liquids spilled on the worktop collect in the moulded recess and rounded corners, keeping the floor dry and reducing slip hazards.
The MAGISTRA PLUS 700 is built on a 1 mm thick AISI 304 stainless-steel worktop that resists corrosion and withstands daily scrubbing. The cast-iron hot plates are permanently sealed to the worktop, eliminating gaps where food debris could lodge. Each plate draws 2.6 kW, so the total 10.4 kW load requires a 400 V 3-phase circuit, the standard supply for professional catering equipment.

Cleaning involves wiping the stainless-steel surface with a damp cloth and mild detergent, then drying to prevent water marks. The sealed construction prevents liquids from seeping beneath the plates, so no disassembly is required for daily upkeep.
