A twin-basket electric fryer divides its 18 kW heating power between two independent vats, letting a kitchen run two different frying programmes at once or double the output of a single menu. Electric elements submerged in the oil transfer heat directly; the oil then conducts it to the food in the wire baskets. Because the oil is the medium, its temperature stays even and recovers quickly after a load is lowered, so each batch emerges with the same colour and texture.
The operator fills each 12 L vat with fresh oil, sets the thermostat between 90 and 190 °C, and waits for the oil to reach temperature. Once the pilot light confirms readiness, the baskets are loaded with product—chips, fish, chicken, doughnuts—and lowered into the oil. A safety thermostat cuts power if the oil overheats, while the main thermostat holds the chosen temperature within a few degrees. After the set time, the baskets are lifted, drained over the vat, and the food is transferred to a holding station. When service ends, the oil is cooled, filtered through the stainless-steel mesh, and drained into the collection tank via the front tap.
The fryer is built from 1 mm AISI 304 18/10 stainless steel, welded continuously for strength and hygiene. Rounded corners inside the vats prevent food debris from catching, and the large cold zone beneath the elements traps sediment, keeping the oil cleaner for longer. Heating elements tilt up for thorough cleaning, and the front drainer simplifies daily oil changes. A stainless-steel filter in the drain line catches particles before the oil reaches the collection tank.
The 18 kW power rating requires a 400 V three-phase circuit, the standard supply for heavy-duty catering equipment. The 53 kg weight means the unit is moved on a trolley or with two people, and the 700 × 714 mm footprint fits a standard worktop or a mobile stand. Each 12 L vat gives enough volume for medium batches, while the twin configuration keeps throughput high without mixing flavours between products.
Cleaning follows the construction: tilt the elements, scrub the vats with a non-abrasive pad, wipe the exterior, and rinse. The cold zone is emptied of sediment, and the drain filter is rinsed or replaced. The thermostats and safety cut-out are checked periodically, but no disassembly is needed for routine upkeep.
